I make Ice Cream, what’s your super power? Today I share with you a spectacular recipe, a vegan Ice Cream with Matcha!
Hey beloved ones. How are you all doing? Summertime is getting at its peak and it’s pretty hot! While many people rant & complain about the temperature to be too hot I actually enjoy the beauty of it going to the seaside and sunbathe or taking a swim in the ocean. Going out at the sun is very important, specially for us who have 6 months or so of foggy and rainy winter season. The Sun allows the body to generate vitamin D, indeed research shows there can be benefits to sunbathing and spending time in the sun. Exposure to sunlight can boost mood, result in better sleep, and vitamin D production strengthens bones and may help fight certain diseases. Just be careful not to stay under direct sunlight from 12 pm to 3 pm for a long period of time or it could end up to some serious problems such as getting sunburnt.
The other day, while at the beach I found myself not being able to have any ice cream cos all the industrial ones available were mainly dairy-based except few options that were sold-out. Once back home I was craving ice cream so bad I made it myself at home. I decided to use matcha tea as well as natural mint essential oil which gives a refreshing taste to create the perfect combo. It’s dairy free and sweetened with stevia, suitable for diabetics as well! Plus, matcha tea powder contains the nutrients from the entire tea leaf, which results in a greater amount of caffeine and antioxidants than typically found in any green tea. Studies of matcha and its components have unearthed a variety of benefits, showing that it can help protect the liver, promote heart health, and even aid in weight loss. Best of all, the tea is simple to prepare, so you can incorporate it effortlessly into your diet and give your day a burst of extra flavor as I made with this ice-cream. You can find matcha online or any refurbished health shop. Today I’ll be sharing with you the recipe. What you need is an ice-cream machine to get better results, such as a creamier texture.
WHAT YOU NEED:
- 3 cans full-fat coconut milk (70% + fats)
- 4 Tbsp raw cashews
- 2 + tsp matcha powder
- 5 drops mint essential oil OR natural extract
- stevia (as needed) (see below)
WHAT TO DO:
Put all the ingredients in a high speed blender such as a Vitamix and blend till cashews are completely dissolved into the coconut milk. To find out the right amount of stevia just start by using some drops (or 1/2 tsp at a time) till you reach the desider sweetness. Done the same with matcha powder till it gets pretty much greenish. Now just pour it in the ice-cream machine (you can get any cheap one on Amazon) and wait till ready. Using coconut milk you’ll get an extremely creamy result because high in fats contrary to other plant-based milk.
What you need to do now is to consume it or eventually transfer in the freezer and eat whenever you want. If you freeze it just be sure to put it in the fridge to defrost a little bit for at least 20 / 30 minutes or till creamy but still quite thick and not melting.
