DS Bio Winery

This is the collection of all the great wines produced by Danilo Scenna, the owner of Ds Bio Winery. Danilo likes to say that his winery is more than organic, it’s a true expression of nature! And you have to believe it!

From 2012 he carries on his project of rediscovering and protecting the native vines of this part of Ciociaria and the ancient cultivation techniques, on the slopes of the Abruzzo Lazio and Molise National Park.
The farm is located at 630 meters above sea level, where soil and weather conditions create a unique environment for viticulture. Biodiversity plays a key role in the company philosophy; the vineyards are located within a few kilometers in small plots and are surrounded by centuries-old olive groves, holm oak and oak woods. Danilo uses neither chemical fertilizers nor herbicides. The only products used are biodynamic preparations.

And the wines produced are damn good, rich and complex, a pure expression of this unknown corner of Italy!

Matre

The grapes of Maturano, Trebbiano and other autochthonous white berried vines are cultivated with the tree-growing system, married to the olive tree. They are ultra-centenary frank foot plants that survived phylloxera in the mid-1800s.

Designation of origin: IGT bianco del frusinate

Grape Variety: Maturano, Trebbiano

Volumnia

The Lecinaro, San giovese and uva Giulia grape varieties are harvested in crates and brought to the cellar. After de-stemming, crushing and maceration on the skins for the entire duration that the spontaneous fermentation takes place in cement tanks, the grapes are pressed with a hydraulic press to guarantee a soft pressing; subsequently the โ€˜pied de cuveโ€™ is inoculated which has fermented previously spontaneously. Alcoholic and malolactic fermentation (spontaneous) in cement tanks and aging on fine lees for 6 months. Aging is carried out further in bottles for at least 6 months. Racking carried out by gravity without using pumps. No clarification or filtration.

Designation of origin:ย IGT rosso del frusinate

Grape Variety: Uva Giulia Lecinaro, Sangiovese

Arcaro

This is the signature wine of DS Bio, a white wine obtained from grapes of Maturano IGT del Frusinate harvested in boxes and brought to the cellar.
After the pressing – destemming and a short maceration on the skins, the grapes are pressed with a hydraulic press to guarantee a soft pressing; subsequently the fermentation foot is inoculated and left to ferment spontaneously previously.
Alcoholic fermentation in cement tanks and aging on fine lees for 6 months. Bottle aging for a further 6 months.
Transfer made by gravity without the use of pumps.

SCOPRI IL PRODUTTORE:

DS Bio Winery

DS Bio Winery. The courage to be unique!

Danilo Scenna is a young producer who combined his two great passions: wine and horses, to give life to a project called D.S. bio. Heย  started to cultivate autochthonous wines in the Comino Valley, in Pescosolido, on the slopes of the Abruzzo Lazio and Molise National Park; at first it began to recover the old family vineyards ungrafted with the ancient farming system: married grapevine to an olive tree; later expanded the company by planting new vineyards.

This farm uses neither chemical fertilizers nor herbicides. The only products used are biodynamic preparations and is certified by Demeter.
