Cyrogrillo Characteristic and fruity smell with dry, soft, harmonious taste. To be served 10-12°C. Good as an aperitif, it goes well with shellfish, fish in general and with medium mature cheeses. Denomination: Langhe DOC Rossese Bianco Grape variety: Rossese Bianco 85%, Incrocio Manzoni Bianco 15%. Vinification: separate vinification for the 2 varieties. Destemming and soft pressing without maceration. Fermentation in steel tanks with temperature control (for RB) and without temperature control (for IM). Cutting about 2 months before bottling. Aging: on noble lees for 5 months in steel tanks. Ricciante Fruity and delicate smell and soft, light, creamy, lively taste. Perfect with cold dishes, fish and as an aperitif. To be served 10-12°C Denomination: quality rosé wine BRUT Grape variety: typical local grapes Harvesting: manual in boxes Vinification: Crushing and pressing without maceration. Fermentation in temperature-controlled steel tanks at low temperatures for about 20 days. After racking, the wine matures briefly on the fine lees for a month and in December the second fermentation starts in autoclave (Charmat method). Aging: "sur lies" for 6 months in autoclave Moschiaccio Characteristic and fragrant aroma of Muscat and sweet, aromatic, characteristic, sometimes lively taste. It matches perfectly with desserts, sweets and small pastries. To be served 6-8 °C. Denomination: Moscato d'Asti DOCG Grape variety: 100% Moscato Vinification: Destalking and cold maceration before pressing. Fermentation in autoclave for 12 days at very low temperatures to preserve the delicate aromaticity of the variety. Adae Fruity aroma, characteristic with possible hints of wood and dry taste, savory, harmonious, evident freshness and compound tannins. To be served 16-18°C. Recommended with first courses, red meats and cheeses Denomination: Barbera d'Alba DOC Superiore Grape variety: 100% Barbera Vinification: Cold pressing and maceration for 3 days.Vinification in stainless steel tanks without temperature control for about 15 days with regular punching down and pumping over. Post-fermentation maceration for about 21 days. Aging: 12 months in oak barrels of 2 ̊ and 3 ̊ passage. Stёrmà Fruity and characteristic aroma and dry, velvety, harmonious taste. Ideal with tasty first courses, with roasted red meat, grilled meats and with medium-aged cheeses. To be served 18-20°C Denomination: Nebbiolo d'Alba DOC Grape variety: 100% Nebbiolo Winemaking process: grape crushing and cold maceration for a few days. Alcoholic fermentation in temperature-controlled steel tanks for about a week. Post-fermentation maceration for 10-12 days in order to obtain the greatest extraction of aromatic and phenolic substances. Aging: 14 months in casks of different capacities Aculei Intense and characteristic aroma and dry, full, harmonic taste. Barolo is ideal to be matched with truffle dishes, meat dishes, first courses based on porcini mushrooms, game, seasoned cheese and it is also perfect to be matched with dry pastry or chocolate. To be served 18-20°C Denomination: Barolo DOCG Grape variety: 100% Nebbiolo Vinification: destemming and cold maceration for few days. Vinification in temperature-controlled steel tanks for 7-10 days with regular pumping over and délestage. Maceration post-fermentation for 20 days. Refinement: minimum 18 months in wood
