Super extra chocolatey vegan truffles! Made with raw chocolate powder, rich in antioxidants!
Have you ever dreamt of guilt free treats? These vegan truffles are the most delightful healthy ones ever! Gluten, dairy and refined sugar free! With Christmas coming, these truffles can be the perfect present for your dear ones, because the most precious gifts are the ones made with love. The first time I had one of these was back in London when I met the most amazing raw vegan pastry chef named Alessandra. She inspired me a lot, and seeing all the beauty you can make with just raw and vegan ingredients I kept learning and experimenting myself. These truffles have no sugar in it, so they are even suitable for those who have issues dealing with it. Being packed with nuts they are also an amazing option for athletes who need quick-releasing energy foods. Let’s check the recipe!
Ingredients to make 20:
WHAT YOU NEED
For the filling
- 1 1/2 cup raw cashews
- 1/4 tsp fine sea salt
- 1/2 cup maple syrup or agave nectar
- 1/2 cup cocoa powder
- 5 Tbsp cold water
- 1 Tbsp virgin coconut oil
For the filling
- 1/4 cup melted raw chocolate butter
- 1 Tbsp maca powder
- 2 Tbsp agave nectar
- 1 tsp Sunflower lecithin (optional)
WHAT TO DO
In a high speed blender such as a Vitamix place all the ingredients for the filling and blend at maximum speed helping yourself with the tamper so you can push the ingredients towards the blades. That way you can get a thick paste such as a a playdough. You have to be quick doing this step or the dough will start melting and get sticky.
Place the balls on a parchment paper sheet and then back in the freezer till completely frozen.
Now melt the chocolate butter in a bain marie or a dehydrator if you have one. Blend in all the other ingredients. I suggest using a tsp of lecithin so the syrup and chocolate won’t separate. If you can’t find sunflower lecithin you can also use the soy one which is easily obtainable in supermarkets.
Now dip in the frozen truffles and place in the fridge.
Now you have to wait at least 6 hours so they will defrost and you can enjoy the creamiest filling ever! These truffles can last even months if frozen in a container or 1 week if stored in the fridge, but I’m sure they won’t even last few days!
