Super easy vegan cookies

These 5-minutes biscuits are the best comfort thing you can give yourself in the morning! Just 5 ingredients and that’s it

In most English-speaking countries except for the United States and Canada, crisp cookies are called biscuits. Chewier biscuits are sometimes called cookies even in the United States. 

Most of the vegan recipes I’ve ever tried out give as a result very crispy biscuits, while what is most satisfying to me is that chewiness which blows me totally out! Finally I found the perfect balance between each ingredient that allows to bake out perfect chewy cookies! 

As promised this recipe calls out just for few easy affordable ingredients and takes only 3 minutes to make plus 12 to 15 mins to bake! You don’t have to be a professional pastry chef to make yourself happy! Let’s see together the recipe!

 

Ingredients to make 8 cookies:

WHAT YOU NEED

  • 1/2 cup sugar
  • 3/4 cup brown sugar
  • 1/2 cup coconut oil
  • 1 tsp salt
  • 1/4 cup vanilla soy milk
  • 3 Tbs vegan chocolate chunks
  • 3 Tbsp pecan chunks
  • 1 1/2 cup flour
  • 1/2 tsp baking powder

 

WHAT TO DO

In a bowl put in order: sugar, salt and whisk together with coconut oil till you get a shiny and liquid compound. 

Add soy milk and mix together again till well incorporated. Add now salt, flour, pecan and chocolate chunks together with baking powder. Using a spatula mix well till you get some kind of thick-hard batter. 

Now cover with cling film and place in the freezer for 5 minutes. Using an ice-cream scoop tool take out the batter and form round-shaped portions that you are going to place on the oven tray with a parchment paper beneath. 

Bake at 180 C for 12 to 15 minutes till lightly golden. Make sure not to over-bake otherwise they will come out too crispy. Now take them out and leave to cool down at room temperature for at least 20 minutes. Once ready you can eat them straight away (be careful not to have all of them!) otherwise you can store them in an airtight container for about 1 week. Hurry up! Go and grab a spoon.
