Vegan American Apple Pie

Apple Pie! One of the most famous american desserts in its vegan version

Hey people! How are you all doing? These days are pretty challenging.

We must follow the lockdown to protect the global community, but still enjoy our time home creating and sharing time with our beloved ones. 

Yesterday I decided to invest my time to make this Apple Pie for my whole family. It’s made with really basic and simple ingredients, and if you you have a bunch of ripe apples and your don’t know what to do with them here is an easy idea to do at home. 

got some ripe organic apples from the landlady and had to take that chance to unleash some creativity in the kitchen. Using wholemeal flour and organic raw sugar, that’s it! 

The result is pretty insane. Healthy, organic and tasty, what else could you ever expect from a dessert? Let’s see together how to do it!

For a 25 cm Cake mold:

WHAT YOU NEED

  • Organic apple chunks 1 kg
  • 1 Lemon (juice)
  • Whole sugar 100 g
  • Cinnamon powder 2 tsp
  • Nutmeg to taste
  • vanilla bean seeds
  • Water 2 tbsp

For the dough:

WHAT YOU NEED

  • 250 gr wholemeal spelt flour
  • 120gr whole sugar
  • 70 + gr seed oil
  • 1 pinch of salt
  • 1 sachet + 1 tsp baking powder
  • 1/2 tsp baking soda
  • a little bit of lemon zest
  • cold rice milk (as needed)

WHAT TO DO

Start by making the dough by combining all the dry ingredients, then pour in the oil and knead with the cold rice adding some time by time until doughy. If you like it to be crunchy put more milk and if you like a softer texture add more oil compared to the milk. Put in the fridge covered with cling film.

Now cut the organic apples into small pieces and let them to cook in a non-stick pan with sugar, cinnamon and other ingredients covered with a lid until they soften and then let the water to caramelize a little bit toward the end by removing the lid.

Once the dough is workable and ready, take it out from the fridge and spread it between two sheets of parchment paper and transfer it in the cake mold as the base. Bake at 180 for a few minutes until lightly golden brown, the put the previously cooked apples and cover with another layer of pastry dough and the rest of the decorations such as small flowers. 

Bake until the top is cooked (golden brown) at 180 C. When ready take it out and leave to cool down at room temperature for at least half an hour. If you want it to be even yummier you can pair it with some vanilla soy ice-cream or chocolate sauce.
