Do you fancy a hamburger? Why not try this delicious vegan version, tasty and healthy!
Yes, I promised you this burger is 100% vegan and natural and here I am to prove it! By the way, have you ever seen a pink Veggie Burger? Well, you need to know that you can use vegs or fruit juice (or even the dried powder of it) to bright up your food in a completely safe and natural way. This colouring comes from an exotic fruit which is called Pitaya (Dragonfruit) and turns everything into a powerful bright pink without adding any taste or smell to your preparations at all. You can find the powder online or if you wanna go easier use beetroot juice. The patty is a combinations of chickpeas and red lentils. And yes, I didn’t forget about egless mayonnaise! Kepp reading for the instructions!
For the buns (make 8):
WHAT YOU NEED
- 3 cups flour
- ½ cup rice milk
- ½ cup warm water
- 2 Tbsp sunflower oil
- 1 Tbsp active dried yeast
- 1 Tbsp whole sugar
- 1 tsp Himalayan salt
- Flax egg (1 Tbsp ground flax seeds + 3 Tbsp water)
- 4 Tbsp pitaya powder + 4 Tbsp water (if you can’t find it just replace the ½ cup arm water with beetroot juice)
WHAT TO DO
Mix whole sugar with warm water and dried active yeast. Let it to activate for about 10 mins in a warm place. Prepare the falx egg by whisking the flax meal with water, do the same with pitaya powder and water, so that you can get a pink paste to add to the ingredients. In a large bowl mix all the ingredients together and knead with hands until the dough is ready. Let to raise for about 1 hour in a warm place covered with a wet towel. Divide the dough in 8 parts and form bun shapes. Sprinkle the top with EVO oil and put some sesame seeds (optional). Let to raise again for about ½ hour and bake at 180C for about 15-20 mind depending on your oven. Do not let them to get too brown.
For the patties:
WHAT YOU NEED
- 500 gr sweet potates
- 1 cup red lentils
- ½ cup chickpeas
- ¾ cup water
- 1 onion
- 4 Tbsp chickpea flour
- 2 Tbsp EVO oil
- 1 tsp minced garlic
- 1 Tbsp smoked paprika
- Salt to taste
WHAT TO DO
Use canned chickpeas and lentils so you won’t have to cook them youself. Peel and cook the sweet potato, then in a food processor mix all the ingredients together until you get a homogenuous mixture. Using your hands for 8 patties and cook in the oven at 180C for about 20 mins.
For the mayonnaise:
WHAT YOU NEED
- 1 cup unrefined sunflower oil
- 1/2 cup unsweetened soy milk
- 2 tsp apple cider vinegar
- Sea salt to taste
WHAT TO DO
Using an immersion blender put all the ingredients in the blender jar and move the blender up and down till it gets mulsified.
There you have all you need to make an amazing burger. Add some ketchup up to your likings and stuff with your favourite veggies!
