Vegan Oreo Cake

Oreo vegan Cake! A mindblowing creation with chocolate & vanilla cream and crispy oreo chunks all over!

Eating vegan foods doesn’t mean sto stick to a fussy and super healthy diet, sometimes we can loosen it up and give our metabolism some good stuff to work on! Unfortunately nowadays veganism is automatically associated with super healthy, and tasteless foods which is something totally out of reality. Deciding not to include animal products in your diet won’t make you feel bored nor limited at all, on the contrary you will get to know lots of new flavors and many new ingredients which will leave you really surprised, or even make you realize what you’ve been eating for a lifetime is actually vegan! Guess what, Oreo cookies are originally made with no animal products in it.

I’ve decided to make a vegan cake based on the famous vanilla cream and a chocolate base. Let’s see together how to make it!

For three 18cm diameter cake molds:

WHAT YOU NEED

  • 2 1/4 cups spelt flour
  • 2 cups raw sugar
  • 1 cup unsweetened cocoa powder
  • 1 teaspoons baking soda
  • 4 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup rice milk
  • 1/2 cup sunflower oil 
  • 1/3 cup soy yoghurt
  • 1 cup freshly brewed hot coffee

For the cream (vanilla):

  • 1 Liters coconut milk (70% fats at least)
  • 150 g sugar
  • 170 g cornstarch
  • 50 g cacao powder
  • 1/2 tsp vanilla pods
  • For the cream (chocolate):
  • 1 Liters coconut milk (70% fats at least)
  • 150 g sugar
  • 150 g cornstarch
  • 50 g cacao powder

 

 

Other:

  • 1 Oreo cookie pack

WHAT TO DO

Start the night before with preparing the frosting. Blend together all the ingredients listed for each cream and then bring to a boil stirring continuously till thickens. Now take it out from the flame and leave to cool down at room temperature for half hour. Transfer in a container and put in the fridge to thickens for at least 8 hours (overnight) .  

The day after, start by preheating the oven at 180 C and place parchment paper in each cake mold base. Now mix all the dry ingredients of the cake batter and all the wet ones separately. Now mix all together and transfer the batter in each mold. Bake for 20 to 30 minutes depending on the oven. Check if cooked using the tip of a knife. If it comes out wet then give other 5 minutes and repeat until comes out dry. 

Take the cakes out of the oven and let them to cool down for at least 30 minutes before to handle. Now let them to cool down completely. 

At this stage you have to transfert each frosting into a sac-a-poche and start layering each chocolate cake on top of each other with the vanilla & chocolate cream in the middle of each layer sprinkling oreo chunks all over. Once done then use the chocolate frosting to cover it and decorate with the cream left. Sprinkle some Oreo chunks on top as well.

Place it back in the fridge for at least 30 minutes before to eat it and there you go! The cake is waiting to be eaten! Let us know what you think about this super yummy recipe. Wishing you an amazing time, taking cake of yourself during this hard times but all together we can make it!
