A coconutty vegan version of Popiscles, incredibly tasty and fresh!
During the summertime everyone craves for ice cream! During my transition to veganism I discovered many ways to make gelato without dairy. You can simply substitute cow’s milk with coconut milk which is very creamy and fatty, but also any other plant-based milk is good, just depending on how creamy you want your ice cream to be. You can even make your own one by blending frozen bananas with any other fruits and that’s it! Today I wanna show you how to make a coconutty version, which reminds me of the famous treat ‘bounty’ which is a coconut-filler bar covered with chocolate. I used white vegan chocolate with superfood powders to give a flashing color such as blue spirulina, which comes from the homonymous algae but completely blue with no seaweed taste nor smell, or pitaya powder, which is a tropical fruit. Let’s check the recipe below!
To make 5 popsicles:
WHAT YOU NEED FOR THE BASE
- 1/2 cup shredded coconut
- 2 Tbsp agave syrup (or maple)
- 2 Tbsp raw coconut oil
- 1/2 tsp pure vanilla extract
- coconut milk as needed
WHAT YOU NEED FOR THE RAINBOW SHIELD
- 1 1/2 oz white vegan chocolate
- any superfood colourings (beetroot powder, pitaya powder, blue spirulina powder, matcha powder, dunaliella salina/carrot powder) or liposoluble colouringsa
WHAT TO DO
Melt the coconut oil leaving the container under the sun for a couple of minutes. In a bowl combine all the ingredients to make the popsicle base adding 1 tsp of coconut milk at a time until sticky. The shredded coconut needs to be rehydrated a little bit or it won’t stick together. Form popsicle patties and insert a wooden stick in it. Place in the freezer for about 3 hours using non-sticky paper underneath. In the meantime melt the vegan white chocolate in a bain-marie and add the superfood powders until well-coloured or piposoluble colorings. Note: you can get natural superfood powders online. Dip the frozen popsicles into the chocolates and create your own style decorating as you want! Place back in the fridge for at least 2 hours before serving!
