Peanut butter and dark chocolate layered cake

This is one of the most amazing cakes you can ever make, try it out!

Yesterday I reached 30K followers on my Instagram page and I wanna thank every single person who supports my work by engaging with me on this beautiful platform which allows to express my arts and cooking passion through the camera. To celebrate together with all of you I thought about preparing this amazing vegan cake which is among my favorites.

Extra fluffy peanut frosting and extra moist dark chocolate sponge cake layers to take you to the sky and beyond! If you love peanut butter this recipe is ideal for you!

WHAT YOU NEED

For three 18cm diameter cake molds:

  • 2 1/4cups spelt flour
  • 2 cups raw sugar
  • 1 cup unsweetened cocoa powder
  • 1 teaspoons baking soda
  • 4 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup rice milk
  • 1/2 cup sunflower oil 
  • 1/3 cup soy yoghurt
  • 1 cup freshly brewed hot coffee

 

Ingredients for the Frosting:

  • 500 ml soy whipping cream
  • 1 1/2 cups peanut butter
  • 1/3 cup icing sugar

WHAT TO DO

Preheat the oven at 180 C and place parchment paper in each cake mold base. Now mix all the dry ingredients of the cake batter and all the wet ones separately. Now mix all together and transfert the compound in each mold. Bake for 20 to 30 minutes depending on the oven. Check if cooked using the tip of a knife. If it comes out wet then give other 5 minutes and repeat until comes out dry. 

Take the cakes out of the oven and let them to cool down for at least 30 minutes before to handle. Now let them to cool down completely. 

In the meantime prepare the frosting. Whip the soy cream taken straight from the fridge and once well firm and fluffy add the peanut butter. Keep whipping and add icing sugar. Once well incorporated then use this frosting to fill each layer and top with some dark chocolate chunks. Leave in the fridge for at least 30 minutes to set before to consume. 

There you go! The cake is done and ready to be eaten. I hope you will enjoy it, but always keep in mind not to eat too much during this lockdown period but keep healthy and fit exercising at home and eat mainly whole foods. Wishing you an amazing time, taking cake of yourself.
