Pannacotta is a classic of world pastry. This version is new, vegan and so yummy!
There’s nothing like enjoying homemade fruit popsicles on a hot day! While store-bought ones contain high fructose corn syrup and artificial flavors all my popsicle recipes are 100 calories or less and made with only natural sweeteners and ingredients! Actually just 3 or less!
With so many choices at the fruit market I decided to go for the easiest ones since the summer fruit is already sweet and flavourful itself. I hope you have as much fun creating these frozen treats as I did! Mine are watermelon and mango. Watermelon is rich in an amino acid called citrulline that may help move blood through your body and can lower your blood pressure. Your heart also enjoys the perks of all the lycopene watermelon contains. Studies show that it may lower your risk of heart attacks. Of course, your whole lifestyle affects your heart health, so make sure you also work out, don’t smoke, limit saturated fat. I also used mangoes, which is my favourite fruit.
It is said that mangoes were also very dear to Lord Buddha. He used to meditate in the tranquillity of lush mango groves. The antioxidant zeaxanthin, found in mangoes, filters out part of sun rays and protects the skin, it helps the digestion and strengthen the immune system. Actually almost any fruit can be frozen, so grab your favorite ingredients and let’s play around! You can use coconut milk as well or any other plant based milk together with the fruit to give a creamy texture or just fruit blends as I did to keep it simple and easy.
Basil Watermelon Popsicles
- 4 cups watermelon slices
- 1 tablespoon fresh basil leaves
- 2 tablespoons lime juice
- 1 tablespoon agave syrup
Orange Mango Coconut Popsicles
- 4 cups mango, divided
- 2 cup unsweetened coconut milk, whisked and divided
- 3 tablespoons orange juice
- 3 tablespoons agave syrup
WHAT TO DO
Firstly, make sure to take all the seeds away, then just Blend all the ingredients together till you get a smooth texture and fill the popsicle molds. Place in the freezer overnight and that’s it. When freezing a juice popsicle, the water will freeze first at 0°C. However, the fruit juice will never freeze completely, and it will remain icy and slushy unless the temperature is well below 0°C.
This is desirable for popsicles so that they melt quicker in the mouth and are not as difficult to bite!
