Vegan Berry Rolls

When it comes to rolls we are used to hear about cinnamon rolls all the time but today we will show a different recipe of rolls… and you will love it!

Hi guys and girls how are you all doing? Lately I’ve been mouthwatering all over my phone scrolling down my Instagram feed cos what I’ve been seeing for a while are those amazing and really inviting vegan cinnamon rolls made in many different ways. Today I woke up and again! Scrolling down my IG feed lots of those rolls showed up so I decided to make my own version with just the few things available in my kitchen. I woke up, had a shower and headed to the kitchen to see what I had. These rolls are really easy to make and require really basic ingredients. I had lots of mixed berries jam so that’s what I’ve used for the filling. Actually is also my favorite jam together with strawberry.

Let’s check together the recipe:

WHAT YOU NEED

FOR THE STARTER:

  • ½ cup warm water
  • 7 g active dry yeast
  • 1 teaspoon coconut sugar

DOUGH:

  • ⅓ cup melted coconut oil
  • ½ cup rice milk
  • ⅓ cup coconut sugar
  • 1 teaspoon sea salt
  • 2¾ cups all-purpose flour
  • cinnamon (as needed)

FILLING:

  • 1 jar mixed berry jam

WHAT TO DO

In a small bowl, mix together the water, yeast, and sugar. Set aside until the yeast is foamy. Now make the dough: first mix the coconut oil, rice milk, sugar, and salt with the yeast mixture. Now place the flour in a large bowl, then add the yeast mixture and knead the mixture then turn it out onto a floured surface. Knead till smooth and form into a ball. Leave it to rise in a bowl covered with cling film in a warm place to rise until doubled in size, about 60 minutes. Now roll it out on a floured surface into a rectangle. Spread on it the mixed berry jam and sprinkle with the cinnamon within ½ inch of the edges. Now roll it tightly into a log, then slice into 12 rolls. Place the rolls into a baking dish and let rise for 1 hour covering with cling film. Preheat the oven at 180 C.  Now bake the rolls 25 to 30 minutes or until lightly golden on top. Remove and allow to cool for 10 minutes.

There you go! Your rolls are finally ready. They are perfect for any time of the day and can be filled with anything you like the most. You can also try with any other jam or also pistachio or hazelnut spread, or just even plain with non-filling turn out amazing.
