These Vegan Marshmallows are amazing healthy snacks to make every kid happy
I do love that kind of fluffy and cloud-like texture! I still remember when I was a kid and used to buy lots of candies at the end of the day spent at the amusement park. Million coloured marshmallows all over the shop were catching every kid’s eyes and I couldn’t hold myself back from loading my backpack with many of those beauties. Such beautiful memories! Nowadays the story is different of course, being grown up I make these sweets for kids and not for myself anymore, and aware of how the food industry works I can tell you that store-bought candies, specially marshmallows are just a bunch of really unhealthy ingredients together. Corn syrup, modified starch, artificial colourings and many other stuff which is not the ideal treat to give our kids.
If you wanna try to make these healthy-vegan version which is super fun, easy, tasty and loaded with benefits you won’t regret! Yes, because I’m gonna use only natural ingredients, such as agave syrup instead of sugar wich is an alternative to the most common sweeteners which has a slow Glycemix Index so wont affect the sugar regulation system in our body and only matcha powder (which is a green powder from a variety of tea) to give that beautiful colour.
The base is made of a mixtures bewtween nuts and raisins. These are full of healthy fatty acids and help to lower the bad cholesterol in our body. Learing how to make treats with benefits is a huge goal to keep our kids at their maximum health potential! Let’s check how to make it!
WHAT YOU NEED
For the base layer:
- 2 cups peeled almonds
- 1 cup shredded coconut
- 3/4 cup golden raisins
- 1/2 cup water
- 4 Tbsp coconut oil
for the marshmallow layer:
- 10g agar-agar powder
- 6 tbs Cold Water
- 336g (1 cup) Agave Nectar
- 1 tbs Matcha Powder
- 1 tsp Vanilla Paste
- 1 tsp Almond Extract
- ⅛ tsp Salt
WHAT TO DO
Line a tall-edges 8×11″ rectangle pan with parchment paper both ways for easy removal later. In a food processor mix all te base ingredients till you get a sticky paste. Spread to the bottom of the pan and place is the fridge to set. You will notice it gets harder because of the coconut oil. In the meantime dissolve the agar agar in boiling water and then trasfert to the electrical mixer. Place the agave nectar in a small saucepan. Add a candy thermometer to the pan and Bring to a boil. Remove from the heat when the temperature reaches 110C.
Place in the mixer and beat for 3 minutes. Stop for a few seconds and add the vanilla paste, almond extract, salt and matcha. Beat again till very thick, shiny and voluminous. Scoop the mixture to the pan and spread it out. Let sit overnight in the fridge. Take it out and slice in pieces. If you want to avoid them to be sticky you can cover with some starch.
