These Onigirazu Sandwiches are damn good, fresh and tasty!
Onigirazu, this is how it’s called a sushi burger (or sandwich). Layered between nori and rice you can be as creative as you like and use any fillings you prefer. Avocado, sweet and sour tempeh, sprouts, tofu, are all great vegan ingredients you can use.
They are a convenient way to eat healthily and quick and easy to make few days ahead since they can be stored in the fridge for few days without getting spoiled.
My wife usually makes a few vegan sushi sandwiches at the beginning of the week and they make a perfect healthy lunch that’s quick to grab and take at work. It’s a quick and healthy meal to have at the office, even on the go while heading to work.
Being gluten-free is also very light to digest even though very nutritious because of the veggies and plant-based ingredients it’s filled with. Tofu, or even tempe are fueled with proteins and vitamins of the B group, that’s why I usually recommend to always put some.
Let’s get now into the recipe. It took us a couple of tries to master the folding of our sushi sandwiches ourselves, but after a few times you’ll get into that without any problem as well. Just take some practice!
WHAT YOU NEED
- 4 sheets nori
- 3 cups cooked sushi rice
- 3 tbs rice vinegar
- 2 tbs sugar
- 1 marinated block tofu
- 1 medium carrot
- 1 small cucumber
- dressings or sauces
WHAT TO DO
Cook your sushi rice according to the package instructions and add the rice vinegar as well the sugar and mix thoroughly. Let to cool down at room temperature. Cut the tofu into blocks that are not too thick as well the cucumber and carrots. You can also add avocado or any other veggie you like. Keeping the nori in a diamond shape with the tip pointing towards you add roughly a 1/3 of a cup of cooked rice and shape it into a square which is about 1/3 of the whole nori sheet surface. Layer the tofu, carrot and cucumber on top of the sushi rice. Try and keep it as stable as possible and layer everything carefully to make the folding easier. Finally, add another layer of sushi rice. Now, fold the corners of the nori up and over the top of the layered sushi ingredients while folding in the sides until the corners close and touch each other on the top. Help yourself sprinkling some water on the nori sheet so it gets stickier on the ingredients and folds easily Turn the sushi sandwich over and leave to sit for 5 minutes in the fridge to set. Once set, cut the sandwich from top to bottom, to show off the fillings properly. Garnish with any sauce or dressing you like.
There you go! You can now keep the sandwiches in the fridge (not cutted in half yet) in a container inside the fridge for about four days. Depending on how you store it and the type of ingredients they can even last longer. Once you get used to it I’m sure It’ll get a staple meal during the working week!
